Chocolate Chip Biscuits


Today is national
Chocolate Chip Day
May 15th

Let's Celebrate with
Chocolate Chip Biscuits.


This is a quick, easy and simple recipe.
The best part is you should have everything
you need in your pantry.


Chocolate Chip Biscuits
3 cups Biscuit Mix
1 cup Milk
1 cup Chocolate Chips
What ever you have on hand
We used Milk and Semi Chips
Butter

Mix Biscuit mix and milk together in a large bowl.
Stir in Chips.
Roll dough out 1/2" thick and cut with 2" cutter.
(If you don't have a cutter a glass will work just fine.)
Or make drop biscuits by dropping 1/4 cup onto baking sheet.
Bake in a preheated oven at 450 degrees for
11 - 13 minutes until golden brown.
Top with a pat of butter while still warm.

Grab a tall glass of milk or
a piping hot cup of coffee and enjoy.




Stressed spelled backwards is desserts.

Churros


There are many different types of dounuts
and each make my tummy happy.

Fritters- filled with fruit

Beignets- Square dounuts served with powdered sugar
A favorite breakfast served here in Louisiana

But today we are making the Spanish dounut
Churro

It is served warm with cinnamon sugar and a cup of
Mexican Hot Chocolate

Churro
1/2 cup sugar
2 tsp cinnamon
1 cup water
2 Tbs brown sugar
1/3 cup butter
1/2 tsp salt
1 cup flour
2 eggs
1/2 tsp vanilla
oil

In a shallow dish mix 1/2 cup sugar and cinnamon and set aside.

In a medium sauce pan bring water, brown sugar, butter
and salt to a full boil.

Remove from heat and mix in flour. 
Mix well until doughy ball forms.

In a separate bowl mix the eggs and vanilla together.
Add to the dough and mix until well blended.
The dough will be glossy.

Put dough into a decorator tube.
I use my Pampered Chef
Easy Accent Decorator


Heat 2" oil to 350 degrees.  Test oil by squeezing
dough into the oil.  The oil should bubble instantly.

Once the oil is hot enough squeeze 4 or 5 churros.
Cut dough with knife off tube.
Make sure not to cook to many at once.
Cook 1 minute then turn and
cook until golden brown.
Remove with slotted spoon onto paper towel.

Roll in the sugar and cinnamon mix while hot.

serve Churros with vanilla pudding and strawberries.

Drinking Straw Lamp Shade


Last week we visited with our
friends at The CSI Project.
The challenge for the week was
Dollar Store Crafts.

Our craft tutorial was a...
Drinking Straw Lamp Shade

This project cost under
5 buck-a-roos.

All of the supplies came from
The Dollar Tree.

You will need:
Mesh basket
(choose the best size to fit your lamp)
Straws
our shade took 3 packs of 180 count

Instructions:
1. Cut straws into 4 pieces

Mama Mia that's a lotta straws
2160 of them


What not to do with the straws...


The second time you drop the bowl full of straws
52 Pick-Up sounds like a fun game.

2. Poke the straws thru the mesh




Most holes fit 4 straws.
If the straws are loose you could
squeeze another into the center.

3. Put on a good movie and have fun
poking the straws until the entire
basket is full.


4. Place shade on, lamp turn on,
grab a good book and enjoy.
