Strawberry Upside Down Cake

Today we are celebrating our 
2nd Blog-anniversary.
We are so excited in the progress of
Chameleon Girls

This past year we launched our
Everyday Princess Dresses
and we are so proud of our little dresses.
They are now shipping around the world.

So we celebrated with a yummy
Birthday cake...

Strawberry Upside Down Cake

1 box butter cake mix, prepare as directions on box.
fresh Strawberries
Cool Whip

Heat oven to 350 degrees.
Line a round cake pan with parchment paper.
Butter the paper.
Prepare cake mix according to box.
Slice strawberries in half
Place in the bottom of the pan sprinkle with sugar.
Pour cake batter over the strawberries.
Bake for 45 minutes or
until toothpick comes out clean.
Cool for 15 minutes.
While cooling sprinkle sugar on top.
Turn the cake onto a serving tray.
Serve with Cool Whip.

Crawfish Etouffee

What time of year is it?

So we are sharing our family
Crawfish Etouffee recipe. 

Etouffee is pronounced

This is a simple dish that can be made with
Crawfish, Shrimp or
(if you are not lucky enough to live in Louisiana)
It taste yummy with any of the above.

Crawish Etouffee
1 stick of butter (1/2 cup)
1 large onion, diced
1 Tbsp garlic, diced
1 green bell pepper, diced
2 stalks of celery, chopped
1/4 cup all-purpose flour
1 lb Crawfish tails
(from a crawfish boil or add Cajun seasoning to taste) 
2 Tbsp tomato sauce
1 cup water (or as needed)
Cajun seasoning, salt and pepper to taste
Minute White Rice

Sautee onions, bell pepper, and celery in butter until onions are clear over medium heat.
Stir in the garlic and cook for a minute.
Add the flour until well blended.
Gradually stir in the tomato sauce and water.
Add the Crawfish tails and bring to a simmer.
Season to taste with Cajun seasoning, salt and pepper.
Simmer for 5 to 10 minutes on low heat 
until the crawfish is cooked.
Serve over hot Minute White Rice

If you are not able to use Crawfish or Shrimp
you can substitute with Chicken.
Cube and cook Chicken before adding to recipe.

We used Minute White Rice and can't tell you
how EASY it was to make.
It was ready in just 5 minutes.
