Crawfish Pie


Jambalaya, Crawfish Pie and File' Gumbo
Me oh My oh

How we love to listen to Pandora Radio while cooking.
Tonight is Hank Williams.
Love some oldies but goodies.


This recipe calls for a veggie mix of onions & celery.


This is what it looks like in the store.
It sure comes in handy
if you are short on time or don't like to cut your veggies.

It is even Cajun certified.

Crawfish Pie
Ingredients:
pie crust or 1 pack small pie shells
1 stick butter
3 cups mixed chopped onion & celery
1 can cream of mushroom soup
(we use cream of chicken)
1 can cream of celery soup
1 lb crawfish
2 cups cooked white rice
1 cup cheddar cheese
Season to taste




Place pie crust into pie pan.
 Sprinkle 1/2 cup cheese over pie crust
 Melt butter in large pan.


Cook veggies in butter until soft.

 Combine soups with veggies and heat.
Add crawfish and cook for 5 minutes. 

Mix rice and cheese with crawfish mixture.
Season to taste.

Bake in 375 degree oven for about 15-20 minutes,
or until the crust is brown.


Serve with a spinach salad.

Our favorite way to make these are in little pie shells.


I was going to take lots of pictures of the little pies,
but this is what they looked like when I got back.


The little pies were GONE!

So moral of story...
make EXTRAS!

They make a special neighbor gift.
Make a batch to give to your friends,
bring to a party,
or quick dinner.
