How do you choose the best
Mac 'n Cheese?
Anything with cheese is a winner.
When we heard about this contest we knew right away what recipe we would use our
Fried Mac N Cheese Balls a la Cheesecake Factory
BUT- there was only 1 rule and we had to use a recipe found from a blog.
What were we going to do?
Hello- Mr. Google (he is such a good friend)
We did our search and found OUR recipe at
Okay to be honest we found this recipe years ago from Mr. Google, but this is the same recipe.
1 pound elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk, warmed, plus 2 tablespoons for egg wash
1 pound grated smoked Gouda
1 pound grated White Sharp Cheddar
Salt and black pepper
2 large eggs
3 cups seasoned bread crumbs (we use Panko)
Vegetable oil, for frying
Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes.

Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes.
Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper.

Fold the cheese sauce into macaroni.
Pour the mac and cheese into a shallow pan and refrigerate until cold, at least 2 hours.
Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze the balls overnight.
Beat the eggs and 2 tablespoons milk together to form an egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
Heat the oil in a deep-fat fryer to 350 degrees F. Fry the mac and cheese balls until they are golden brown and center is hot, about 5 minutes. Serve hot with our favorite Marinara or Alfredo sauce or combination of both for dipping.

Oh my holy heck! We used to get fried mac and cheese from this play place near us but they stopped making tit. I'm SO making this! Looks freakin' awesome!!!!

I had the best mac and cheese once. I asked what secret was...they boiled the elbows in milk to make them even creamier. I bet these would be even awesomer (is that a word?) boiled with the milk...

ReplyDeleteI'm making these tonight and I'm guessing your make the egg wash with milk, roll them in that, then dip in panko before frying? Mine don't seem to want to hold onto much panko after I dip them in the egg wash. Maybe since they're frozen still? Other that that, they look super good!

ReplyDeleteYes- they can be baked, but the taste is not the same and they don't hold up as nice.
DeleteGlad you can bake them, I can't eat greasy foods do deep fried would be out of the question for me. I tried a bite at Mac N Grill, someone else ordered them and passed them around the table. Don't know how they were repaired but they were good.

ReplyDeleteMade this over the weekend. Only put them in the freezer for 2 hours. They came out PERFECT! They were a huge success. Even though I made a little over 60 balls they were all GONE quickly! They were such a hit I have been asked to make them for Thanksgiving this year! THANKS for the recipe! Oh... and I didn't even have a chance to make the sauce to dip them in! lol
