Thumbprint cookies are one of the classics.
Who can resist a buttery cookie filled with jam.
Especially homemade jam.
We are using our
Ingredients
- 1 cup butter (2 stick or 8oz.), room temperature
- 1/2 cup sugar
- 2 eggs, room temperature
- 1 teaspoon vanilla
- Pinch of salt
- 2 cups of flour
- 3/4 jam (your favorite)
- Parchment Paper
- **Optional** 1 cup chopped nuts- We use Praline Pecans in ours.
2 Separate the eggs. Add the egg yolks and vanilla to the butter mixture.
3 Add the flour and salt. Mix until combined. Place the dough in the fridge for 30 minutes.
4 Preheat the oven to 350 degrees.
5 Roll the dough into 1 inch balls.
6 If not using nuts skip to number 8. In shallow dish whisk the egg whites until bubbly and frothy.
7 Dip the balls into the whites and roll into the nuts. Pat the nuts so they will stay on the cookies.
8 Place ball on parchment covered cookie pan.
9 Press down with your thumb to make a small well in each cookie. Don't press too hard or the cookies will break apart.

10 Fill with 1/2 teaspoon of jam.
11 Bake for 12 -15 minutes or until slightly firm. Allow to cook on pan for a few minutes then move to wire rack to finish cooling.
12 Grab a big glass of milk and enjoy.
